Ooft Pepper Sauce


Ooft! Scotch Bonnet pepper sauce is a premier grade artisan produced sauce made in small batches in a old hall in Scotland.

The recipe is an old Trinidad recipe handed down by the manufacturer's father, a master sauce maker from Maracas St Joseph in Trinidad. The sauce is not only hand made, but like fine wine it sits in large glass jars for twelve months to mature and acquire its unique flavor, before bottling.

The main ingredient is Scotch Bonnet peppers from either Jamaica or Africa depending on the time of year. To this is added garlic, daikon (mooli), fresh squeezed lime juice, virgin olive oil, salt sugar and vinegar.

The product has a shelf life of two years but very few people keep it that long as once you've tried it you will use it again and again.
